The sourdough starter used contains a very high number of micro-organisms that multiply, stimulating an optimal fermentation that can eliminate any pathogenic germs.
After 72 hours of hard work, a soft, spongy dough is obtained which retains the unique characteristics of the raw material used and has a unique quality of digestibility.
